Happy new year everyone. May 2020 be better then 2019. We are starting fresh with a clean slate with a fresh new year of new beginnings as well as closing off a decade and starting a new one.

In 2020 I plan on starting a blog with \240instantPot recipes and ideas as well as some life insights and pointers. I haven’t gotten the web page up yet but today’s first recipe of 2020 is a favorite to many. Crack chicken. My friend from the LDS church Danielle Baldwin gave me a crack chicken recipe a few years back and recently my good friend Dawn Litts whom I met through the Railroad groups gave me her recipe. I’ve combined the recipes together and made my own interpretation of crack chicken. this is commonly a slow cooker recipe but who has time for all of that anymore? With the popularity of the InstantPot and Air fryers I want to share my instant pot recipe for this slow cooker favorite.

I just got my IP for Christmas and it’s a life saver and saves a lot of time.

In conjunction with this new blog and my SounderLife blog, busy commuters don’t have time to fix a nice meal for their family. Well think again. The instant pot is your friend. So here’s a New Years dinner idea. IP crack chicken

Crack chicken recipe.

Chicken breast 2-4

Cream cheese 1 block

(these are optional)

Green chili’s or peppers (if desired)

onions

This is a must Dry ranch packet or yellow ms dash dry Italian seasoning if on low sodium diet.

Chopped up bacon

cheddar cheese.

You can honestly tweak it to your liking but this is the best way.

The base is chicken and cream cheese

Add a bit of butter and chicken broth to the insta pot then just go for it

Set the cooking time for 15minutes.

Be sure your chicken has an internal temperature of 165° F to be cooked through.

So to be specific here’s the step by step

Add chicken and cream cheese to the Instant Pot. Add in your peppers if desired. Sprinkle with Ranch Dressing Mix, add minced garlic, onion powder (if desired) and paprika.(if desired)

Pour in chicken broth.Close lid and pressure cook at High Pressure for 15 minutes + 10 minutes Natural Release. Turn off the heat. Release the remaining pressure. Open the lid.Remove chicken from Instant Pot and place it into a large bowl or onto a chopping board. Using two forks shred the chicken.Switch Instant Pot to Sauté mode and whisk the cream cheese mixture until well combined.Add shredded cheddar cheese and stir to combine until the cheese is meltedTurn off the Instant Pot and add the shredded chicken. Stir well to fully combine the chicken with the cheese sauce.Stir in bacon pieces if wanted and serve

You can serve it over rice or pasta or mashed potatoes. Put in in tortillas or put it on hamburger buns and make in to a sandwich.

There you have it. It’s that easy. Throw it in the IP and boom in 30 minutes or less dinner is done. Happy new year and give this a try. I know your family will love it.
